The cooperative "Biftu Gudina" was established in 2012, and is located in the Agaro district within the Jimma zone, with about 150 smallholders contributing to this lot. The co-op benefits from high altitude and rich fertile soils.
Biftu Gudina has a strong leadership, and since it was established, it has become famous in specialty coffee circles thanks to its ability to produce incredibly complex and luscious coffee consistently. It now delivers prices that farmers often still find unbelievable - as much as four times higher than they were in the past.

The coffee at Biftu Gudina is processed using the washed method. At the washing station, cherries are sorted by hand to make sure that only the perfectly ripe cherries enter the hopper that feeds the eco-pulper for fermentation. Afterwards the beans are soaked in clean water in concrete tanks for 8 hours, and then sun dried for 10 to 14 days on raised beds, finally being carefully hand sorted again.

Roast info

This coffee is roasted for filter - meaning, a light roast. We roast our seasonal coffees in this manner because we wish for the coffee to shine as it is - for it to display the characteristics that have produced its excellent quality. This kind of roast allows the natural flavours, acids and sugars of the coffee to be in the front, and lets you learn about its origin through taste. As the name says, it's best used in filter coffee methods, such as drip or immersion, so while making an espresso from these is possible, it could prove tricky.

Use and storage

We recommend you enjoy this coffee within 3 months of the roasting date.
Store in a dry and cool place, between +16 and +25 degrees.
